BLINI

Times being tough and all, it's good to know that Julia Child's blini recipe delivers a great return on investment.

I made these for the Mildred Pierce Chicken Kiev Beragon post when I theorized that if Mildred had set her sights on this elegant upscale pancake, rather than her pedestrian specialty of waffles, she may have been able to insinuate herself into the upper echelons of Pasadena society. And earned the love of her daughter, Veda the viper.

If you haven't seen either version (Joan Crawford won an Oscar, Kate Winslet an Emmy) this won't make any sense. Worry not, that doesn't take a whit away from the elegance of blinis.  

This tower is a stack made from the recipe in J.C.'s Mastering the Art of French Cooking.  Since you already have the book I needn't rewrite it here.

And of course crème fraîche and caviar. Beluga when you're flush or foolish, salmon roe in more impecunious times. Can't go wrong with either.

Just a thought for all the holiday entertaining coming up. And on that topic, don't forget Nachos Olga: home-cured Mexican gravlax on freshly fried corn chips.

    Seeing these/this reminds me a few wonderful meals at the Russian Tea Room eating nothing but caviar and blinis!  Oh those were the days!

      My dear friend Charlotte Kelly Veal had “her” table so the special attention from the ancient waitresses was way cool. BTW Charlotte’s hubby, Speed Veal was one of the famous Veal brothers: Holiday Veal and Curry Veal. Actual names, not nicknames.
